Vegan Sweet Potato Soup


A Cozy, Comforting, Healthy & Delicious Recipe!

Up until now I have been somewhat of an intuitive cook, which means sometimes I just throw things together, and I love the way it comes out, but then I can never quite recreate it! So for my own benefit, and now also for yours, I am writing down these recipes along with measurements!

I have been following the Medical Medium for almost 3 years, as I believe in what he teaches. From a food standpoint it makes perfect sense, to eat as many foods as possible that are alive - fruits, veggies herbs & spices! Also there is a spiritual component to these foods that helps to strengthen us on all levels. If you haven't read his books yet, please do, so far he has two books: Secrets Behind Chronic & Mystery Illnesses and How to Finally Heal & Life Changing Foods (which includes great recipes!)

With the colder weather, I have been craving warm, cozy, comforting soup and I have created this Sweet Potato Soup a few times, and it is too good not to share! You can feel good about this vegan recipe as it is so easy, so healthy and so delicious and fits nicely for people following the Medical Medium protocols. It is also a helpful recipe for those of you who are dairy free and/or gluten free.

Here is what you will need:

*4-6 Organic Sweet Potatoes (to yield 4 cups)

*2-4 Cups of Organic Unsweetened Coconut Milk

*1 Organic Onion

*1-2 Cloves of Organic Garlic

*1-2 Teaspoons of Sea Salt

*Any additional spices you desire. I have an organic mixed seasonings that I use for everything!

*UPDATED Option: I added 1/2 a red pepper to this recipe and it tasted INCREDIBLE!!

Simple Steps for Yummy Sweet Potato Soup!

STEP 1: Slice up Sweet Potatoes as evenly as possible and steam until tender (under 10 minutes).

STEP 2: Put sweet potatoes in food processor.

STEP 3: Saute a whole organic onion and a 1-2 cloves of garlic in organic refined coconut oil until cooked.

STEP 4: Add sauteed onions and garlic to food processor, or put in a separate container to mix with coconut milk and spices.

UPDATE: I did this same recipe but added 1/2 red pepper and sauteed that with the onions and garlic and it tasted AMAZING!!!!!

STEP 5: Add 2-4 cups of Organic unsweetened coconut milk to food processor. Start with a cup and then add in as much as you need to get the consistency you like. I like mine thick so I only added around 2 cups. *You can also mix the coconut milk, sauteed onion & garlic with the salt and spices separately and then add to the food processor. Either way it will work!

STEP 6: Add 1-2 tsp of sea salt, start with 1 tsp and then taste after it is combined and add more if needed.

STEP 7: You can add whatever spices you desire I currently use an organic no salt seasoning which has some dehydrated vegetables and spices.

STEP 8: Put the food processor on high until all the ingredients are fully combined and wallah - you have cozy sweet potato soup!

Now sit back and relax and enjoy this healthy, warm, soup made with love!
