Cooked Vegan Breakfast!


Ya know when you just want a big, yummy cooked breakfast?

Well, that is what hubby & I wanted yesterday, so we made this delicious healthy, vegan spread that I wanted to share with you! For those of you following the Medical Medium protocol, this breakfast does not contain any of the "no foods!" (soy, corn, canola oil, dairy, gluten & eggs).

So our big cooked breakfast consisted of healthy home fries, "chick pea scrambled eggs" with some fried tomatoes & gluten free toast! Mmmmm!

Home Fries:

To make some healthy home fries we cut up some organic potatoes, steamed and then lightly sauteed in some olive oil. For flavor we added some Himalayan salt, Rosemary & Thyme.

*Next time, I am going to try baking my home fries by putting them on a baking sheet with parchment paper (no need to steam) and baking at 425 degrees for 10 minutes, then flipping them and baking for another 10 minutes so they are nice and brown! Big bonus for that - is NO OIL is needed!

Scrambled Chick Pea "Eggs":

For these, we sauteed up organic onion, garlic and red peppers in some coconut oil and then once sauteed we added in some chick peas and mashed it all together with a potato masher. We then added in some steamed broccoli and lightly sauteed with the other ingredients in the pan and added a few twists of Himalayan salt.

Fried Tomatoes:

I am originally from England and it is customary to have a few fried tomatoes with your cooked breakfast, so we sliced a few tomatoes and very lightly salted and sauteed them!

Gluten Free Toast:

We like the Sami's Bakery Millet & Flax toast and for a butter replacement we just put a thin layer of coconut oil on the toast and a little twist of salt!

Then we added a little organic ketchup to the plate and Wallah ~ now you have a delicious & very healthy, gluten free, vegan cooked breakfast!
