Decadent Vegan Coconut Chocolates!


Oh my goodness! These are so decadently delicious! You're welcome! :)

Have you heard of Bounty Bars? If you haven’t they are basically delicious candy bars that are coconut shreds covered in chocolate! YUM! However Bounty Bars have ingredients that I am trying to avoid..... so I finally decided as it is Valentine’s Day (perfect excuse) that it was time to create a “healthy” coconut chocolate to feast on!

I am delighted to say I found a vegan recipe that I love and I have added my own tweaks ~ SO ENJOY!

Decadent Vegan Coconut Chocolates!

Total Time: 10m

Yield: 12-14 chocolates

Ingredients:
  • 1 cup unsweetened shredded coconut (use organic if possible)

  • 3 1/2 tbsp pure maple syrup, honey, or agave (I used raw honey)

  • 2 tbsp virgin coconut oil (I may skip this step next time and see if it still tastes good, let me know if you try this!)

  • 1/2 tsp pure vanilla extract (I used non alcoholic wild vanilla powder by Wild Foods)

  • 1/8 tsp salt (I did just a pinch of pink Himalayan salt)

  • 3 oz chocolate chips (I used Enjoy Life dairy free vegan chips)

  • 1 tsp oil, optional (did not use)

Instructions:

*Process the first five ingredients in a food processor or blender. (While you can technically stir by hand instead, the patties will be less firm.)

*Line a plate with parchment paper. Form the blended mixture into patties with your hands, then freeze until firm. (If the mixture is too sticky to make patties, put it in a bowl and freeze for only a few minutes, until it’s firm enough to shape).

*Carefully melt the chocolate chips. Stir in the optional 1 tsp vegetable or coconut oil before melting because it makes a much smoother chocolate sauce that more easily coats the patties and enables you to use less sauce overall.

*Dip patties into the sauce then re-freeze until firm. (for about 30 minutes)

*Leftovers are best kept cold, but they can definitely be left out for a few hours on a not-too-hot day.

*For a raw version, omit the chocolate chips, and mix together the following as a coating instead: 1/4 cup each cacao powder, virgin coconut oil, and raw agave or honey.

What a treat! Needless to say they didn't last long!!
